QUICK SKILLET QUICHE
3 medium-size scallions 1 tablespoon butter or margarine 6 large eggs 2 packages (3-ounces) cream cheese, softened 1 cup milk 1 cup coarsely grated Cheddar cheese, about 4 ounces 1/2 teaspoon salt 1/2 teaspoon dried basil 1/4 teaspoon black pepper Three Herb Bread (recipe follows)
Set aside about 5 green scallion leaves; thinly slice remaining scallions is to measure 1 cup.
In heavy 10-inch skillet over medium heat, melt butter; add sliced scallions; cook 5 minutes, stirring occasionally until tender.
Meanwhile, in medium-size bowl with electric mixer as medium speed, beat eggs, cream cheese and milk until smooth. Stir in Cheddar cheese, salt, basil and pepper. Pour mixture into skillet over medium heat; cook 2 to 3 minutes until mix just set around edges.
Place reserved scallion leaves decoratively over surface of quiche; cover with tight-fitting lid; cook about 15 minutes until knife inserted in center comes out clean.
Serve with Three-Herb Bread.
THREE-HERB BREAD
1/2 cup butter or margarine, melted 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh chives 1 teaspoon dried basil 1 loaf French bread
Stir butter and herbs together. Slice 1 loaf French bread into 1/2-inch-thick slices almost through to bottom crust; brush slices well on both sides with herb butter.
Bake bread, wrapped in foil, at 375 degrees F 15 to 20 minutes until heated through. Break into individual slices to serve.
