CRISPY BREAD-DOUGH PIZZA
"Sizzling with eggplant, peppers, onions and cheese! Frozen dough gets it done pronto!"
1/4 cup vegetable oil 1 small eggplant, diced, about 4 cups 2 medium-size onions, sliced, about 2 cups 1 large green bell pepper, cut into strips, about 1 cup 1 clove garlic, crushed 1 teaspoon salt 1/4 teaspoon dried oregano 1 (1 pound) frozen bread dough, thawed 1 (15 1/2-ounce) jar pizza sauce 1 (8-ounce) package mozzarella cheese, grated, about 2 cups Mixed Green Salad (recipe follows)
Heat oven to 450 degrees F.
In 12-inch skillet over medium heat, heat oil. Add eggplant, onions, green pepper, garlic, salt and oregano; cook about 10 minutes, stirring occasionally until tender.
Grease jellyroll pan or 14-inch round pizza pan. Pat bread dough into pan, forming crust with 1-inch-wide rim.
Bake 10 minutes. Remove from oven; using wide spatula press down dough in center of pizza, leaving rim standing high. Top with pizza sauce, vegetable mixture and cheese. Bake 5 minutes until cheese is melted and mixture is hot and bubbly.
Serve with Mixed Green Salad.
MIXED GREEN SALAD
3/4 cup olive oil 1/4 cup white wine vinegar 1 teaspoon dried basil 1/2 teaspoon each sugar and salt 1/4 teaspoon pepper 6 cups torn assorted salad greens
In small bowl combine olive oil, vinegar, basil, sugar, salt and pepper. Toss with salad greens.
