ROAST TURKEY BREAST WITH BARBECUE SAUCE
1 turkey breast (8 to 9 pounds), defrosted 3 tablespoons butter or margarine, softened Barbecue Sauce (recipe follows)
Place turkey breast, skin side up, on rack in shallow open roasting pan. Rub skin well with butter. Insert roast thermometer in thick part of breast, not touching bone.
Roast in a moderate oven (325 degrees F) for 2 1/2 hours, basting frequently with drippings.
Brush with Barbecue Sauce and continue to roast, brushing occasionally with sauce, 1 to 1 1/2 hours longer or until juices run yellow when breast is pierced with a fork. Roast thermometer should register 180 degrees F.
BARBECUE SAUCE (Makes about 2 cups)
1/3 cup chopped onion 2 cloves garlic, minced 2 tablespoons vegetable oil 1 (12 ounce) jar apricot preserves 1/4 cup chili sauce 1/3 cup wine vinegar 1 teaspoon hickory salt
Saute onion and garlic in oil in a small saucepan until soft. Stir in preserves, chili sauce, vinegar and salt. Simmer for approximately 20 minutes.
