OATS AND PUMPKIN PINWHEELS
1 1/2 cups sugar, divided use 1/2 cup (1 stick) margarine, softened 2 egg whites 1 1/2 cups all-purpose flour 1 cup Quake Oats (Quick or Old-Fashioned, uncooked) 1/4 teaspoon baking soda 1 cup solid pack pumpkin puree 1/2 teaspoon pumpkin pie spice 1/4 cup sesame seeds
Beat 1 cup sugar and margarine until fluffy; mix in egg whites. Stir in combined flour, and baking soda. On wax paper, press into 16 x 12-inch rectangle
Spread combined pumpkin, 1/2 cup sugar and spice over dough to 1/2-inch from edge. From narrow end, roll up dough. Sprinkle sesame seeds around roll, pressing gently.
Wrap in wax paper, freeze overnight or until firm.
WHEN READY TO BAKE: Heat oven to 400 degrees F. Spray cookie sheet with no stick cooking spray.
Cut frozen dough into 1/4-inch slices. Bake on cookie sheet 9 to 11 minutes or until golden. Remove to wire rack; cool completely.
