DINNER IN A SHELL
3 medium acorn squash 1/4 teaspoon ground black pepper 1/2 teaspoon curry powder 1/8 teaspoon ground nutmeg 1 cup chopped onion 1 cup chopped green bell pepper 1 cup chopped celery 1 cup sliced fresh mushrooms 3 tablespoons butter or margarine, melted 3 cups chopped cooked ham 1 cup sliced ripe olives 2 tablespoons chopped pecans
Cut squash in half; remove seeds. Place cut side down in shallow baking dish; add 1/2 inch hot water.
Cover and bake at 400 degrees F for 45 minutes, or until squash is tender; drain. Cool squash slightly; remove pulp, leaving shell intact. Mash pulp with pepper, curry powder, and nutmeg; set aside.
Saute onion, green pepper, celery, and mushrooms in butter until crisp-tender.
Stir in ham, olives, and squash pulp. Divide mixture evenly among squash shells; sprinkle with walnuts.
Cover and bake at 350 degrees F for 20 minutes, or until heated through.
