BLACK BEAN STEW
1 pound dried black beans, rinsed and picked over 4 cups water 8 ounces smoked pork neck bones 1 (16 ounce) can tomatoes 1 teaspoon salt (or to taste) 3/4 teaspoon each basil and oregano 1/4 teaspoon pepper
In Dutch oven soak beans in water overnight. Or bring to boil, cover and boil 2 minutes; remove from heat and let stand 1 hour.
Add bones; bring to boil. Reduce heat; cover and simmer 1 to 1 1/2 hours or until beans are almost tender.
Add remaining ingredients; cook, uncovered, until all are tender and stew is desired consistency. If desired, cut meat from bones and add to stew.
