BASIC BEST SALMON LOAF OR SALMON PATTIES

1 (15 1/2 ounce) can salmon
2 cups fresh bread crumbs
1/3 cup minced onion
1/4 cup milk
2 eggs
2 tablespoons minced fresh parsley
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon dried dill weed, crumbled
Dash pepper

Drain salmon, reserving 2 tablespoons of the liquid. Place salmon in medium bowl. With fork, break into flakes.

Add remaining ingredients to salmon; mix well. Place salmon mixture in well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf dish.

Bake at 350 degrees F 45 minutes.

VARIATION:

SALMON PATTIES:
Prepare salmon mixture as directed in Salmon Loaf. Shape into eight 1-inch thick patties. Fry in 2 tablespoons vegetable oil in large skillet over medium-high heat until golden brown on both sides.

Makes 4 to 6 servings
