CHICKEN SATE APPETIZERS
1 large boneless chicken breast (about 3/4 pound) 3 tablespoons soy sauce 2 tablespoons cider vinegar FOR THE SAUCE: 1/4 cup smooth peanut butter 2 tablespoons peach preserves 1/2 teaspoon dry mustard 1/2 teaspoon salt Dash hot pepper sauce or cayenne pepper 1/4 teaspoon ground ginger (optional) 1/2 cup water
TO PREPARE THE CHICKEN: Cut chicken into 1-inch pieces (there should be about 24 pieces). Combine soy sauce and vinegar. Add chicken, cover tightly and refrigerate 1 to 2 hours.
TO MAKE THE SAUCE: In small saucepan, combine peanut butter, peach preserves, mustard, salt, hot pepper sauce, ginger and water. Heat over low heat, stirring, until smooth. Keep warm.
TO COOK: Thread chicken on six skewers. Broil or grill close to heat, 5 to 7 minutes, turning frequently.
TO SERVE: Serve chicken with sauce spooned over.
