KEY LIME HONEY CHICKEN4 chicken breast halves
1/2 tsp. garlic salt
1/4 tsp. ground black pepper
1/2 cup plus 2 tbsp. honey, divided use
1 cup plus 2 tsp. Key lime juice, divided use
1/2 cup mayonnaise
2 green onions, chopped
2 tbsp. chopped fresh cilantro (optional, for serving)
Rub the surface of the chicken with the garlic salt and pepper and coat with 1/2 cup honey. Arrange the chicken in a single layer in a shallow dish and pour 1 cup Key lime juice over the top. Pierce the chicken with a fork. Marinate, covered, in the refrigerator for 2 hours, turning occasionally; drain.
Combine the mayonnaise, 2 tablespoons honey, 2 teaspoons Key lime juice and the green onions in a bowl and mix well. Divide this mixture in half and set aside one half.
Remove the chicken from the marinade and coat with one half of the mayonnaise mixture.
Grill the chicken until cooked through.
Serve each breast half topped with a spoonful of the reserved mayonnaise sauce. Sprinkle chopped cilantro on top.
