MOLDED RED BARTLETT WALDORF SALAD
FOR THE WALDORF SALAD: 1 (3 oz.) package lemon flavor gelatin 1/2 teaspoon salt 1 cup boiling water 3/4 cup cold water 2 fresh red Bartlett pears, unpeeled, cored and diced 1/2 cup halved seedless red grapes 1/4 cup chopped celery 2 tablespoons lemon zest FOR SERVING: Creamy Waldorf Dressing (recipe follows) Red Bartlett slices and grapes (for garnish)
Dissolve gelatin and salt in boiling water. Add cold water. Chill until partially set.
Add pears, grapes, celery and nuts. Pour into 4-cup mold and chill until set,
Unmold and serve with Creamy Waldorf Dressing. Garnish with pear slices and grapes.
CREAMY WALDORF DRESSING (Makes about 1 1/4 cups)
3/4 cup mayonnaise 1/4 cup heavy (whipping) cream Chopped walnuts (for garnish) 1 tablespoon granulated sugar 1 tablespoon grated lemon peel
Combine mayonnaise, whipping cream, sugar and lemon peel; mix well. Serve, garnished with lemon zest.
