One of my favorite low-fat meals is a salad of any kind. I use this base as the dressing and then add other things depending on what I'm serving it with:
Low Fat , Low Calorie Creamy Salad Dressing
This is for one serving and it has 60 calories and 2 grams of fat.
2 Tbsp. Low Fat Mayo
1 Tbsp. no-fat half and half
2 tsp. red wine vinegar
a few drops of lemon juice
salt and pepper to taste
Sometimes I peel, seed and dice a tomato and add that to it. Sometimes I add a little tarragon and use it for chicken salad. The variations are endless depending on your own taste.
