Recipe(tried): Grecian Chicken Night.....
Misc. Good Afternoon Everyone!
What a beautiful day it is turning out to be, the roofers will be finished today. They have done a beautiful job! I went shopping for all my Easter Dinner staples this morning so I will be posting our Dinner Menu tomorrow.
Tonight for dinner we will enjoy Grecian Chicken, Green Beans Italiano, Florida Glazed Carrots, Baby Greens Salad and Blueberry Delight.
Enjoy!!Grecian Chicken Breasts
serves 6
6 boneless, skinless chicken breasts, split
1 pkg. (10oz.) frozen chopped spinach, thawed
1 pkg. (8oz.) feta cheese, crumbled
1/2 cup mayonnaise
1 clove garlic, minced
1/4 cup flour
1/2 tsp. paprika
12 strips bacon
Preheat oven to 325. Cut a pocket into each breast, salt and pepper to taste and set aside.
Thoroughly drain and squeeze any liquid from the thawed spinach. Do not cook. Combine with feta cheese, mayonnaise, and garlic. Stuff into the pockets.
Combine the flour and paprika and lightly coat the stuffed chicken breasts. Wrap 2 strips of bacon around each breast and place on a baking sheet. Bake uncovered at 325. for 1 hour. Unbelievably delicious!!!Italian Green Beans
2 cans The Allens Sunshine Brand Cut Italian Green Beans
1 slice onion, chopped
1 slice red bell pepper, chopped
1/2 garlic clove minced
salt and pepper to taste
Put all ingredients in a saucepot and heat over med. until done, about 25 mts.Florida Sunshine Glazed Carrots
Serves 6
6 carrots, peeles and sliced into 1/4 inch slices
2 t. sugar
1/2 t. ground cinnamon
1/4 t. nutmeg
1/4 t. allspice
1/2 stick butter
slat and pepper to taste
10 dried apricots, slivered
1/3 c. sliced almonds
2 T. fresh ornage or tangerine juice
Place the carrots in a saucpan, cover barely with water and bring to a boil. Reduce heat and simmer 10. mts. Rinse under cold water and drain.
Stir the sugar and spices together and set aside.
Melt the butter in a skillet, stir in the carrots and the citrus juice. Sprinkle with the sugar mixture and cook over med. heat til carrots are glazed and sauce is slightly thick. Season with a pinch of salt and pepper.
Stir in appricots and almonds and cook an additional 5 mts. Serve immediately.Mixed Baby Greens Salad w/ Ajo Vinaigrette Dressing
Mixed Baby Greens
Chopped coarse tomatoes
bunch of sliced black olives
1. c. veg. oil
1/4 c. vinegar
3 T. lemon juice
1/2 t. ground black pepper
1 T. fresh minced dill
1/4 t. paprika
1/2 t. dry mustard
1 clove garlic minced
Combine in a glass jar and shake well. Refrigerate til ready to use. Mix salad ingred. together, then drizzle dressing over.Cherry or Blueberry Delight
2 cup graham cracker crumbs
1 cup powdered sugar
1 stick oleo
1- 8 oz. pkg. of cream cheese
1 pkg. Dream Whip
1 can of pie cherries or blueberries
Melt oleo, add graham cracker crumbs, and pat into baking dish. Mix
cream cheese and powdered sugar together and put over graham cracker crumbs. Top first with Dream Whip and last with cherries or blueberries.
