This is a great weekday recipe for the busy working woman.I like this not just for its good taste, but the simple ingredients and the quick preparation after a long day.
Pork Chop and Potato Casserole
4-6 pork chops
1-2 Tbsp. flour
1 tbsp. vegetable oil
2 1/2 Tbsp. parmesan cheese, grated
1/8 tsp. black pepper
2 cups sliced or cubed potatoes
1 onion, sliced
2 beef bouillon cubes
1/4 cup water
1 1/2 tsp. lemon juice
Dredge pork chops in flour. Brown in the oil.
Mix together parmesan cheese and black pepper. Sprinkle 1 Tbsp. of the cheese mixture over the pork chops in skillet.
Place potatoes over the pork then sprinkle 1 Tbsp. cheese mixture over and top with the sliced onion.
Mix bouillon cubes with the 1/4 cup water and lemon juce; pour chops and onion. Sprinkle with remaining cheese mixture.
Cover and simmer 40 min.
