Recipe(tried): Chicken Perdomo and Sauteed Zuchinni and Yellow Squash with Mushrooms

Hi Everyone,

This is a dish I have made before. We absolutely love it for the flavor and the simplicity. It's also great for your waist-line.

Chicken Perdomo
serves 2

1 boneless skinless chicken breast
1 lemon
2 garlic cloves, minced
fresh rosemary
1-2 Tbsp. olive oil
1 tsp. Italian Seasonings
salt and pepper to taste

With a sharp knife, butterfly the chicken breast. Lay each piece on two plastic wraps, and pound thin.

Sprinkle with seasonings, garlic and salt and pepper, squeeze lemon juice all over & put into a glass dish, cover and refrigerate so flavors blend for at least two hours.

when ready to cook, pour the oil in a large skillet, heat to med-high and cook the meat til well browned on all sides. Squeeze some more lemon juice over and serve with the veggies and three delicious slices of tomatoes drizzled with balsamico, olive oil, salt and pepper.

Sauteed Zuchinni and Yellow Squash with Mushrooms

2 yellow squash
2 green zucchini
1/2 cup sliced mushrooms
salt and pepper
1 Tbsp. lemon juice
1 garlic clove, minced

Saute the veggies in 1 Tbsp. olive oil, when almost done, sprinkle lemon juice all over.
