Yesterday, after returning home from my "night" class (which also has a few all-day sessions on Saturdays), I started to tidy up around this joint (Men!) and wanted something simple but delicious for dinner.

TACO TORTILLA BOWLS

FOR THE BOWLS:

Preheat oven to 400 degrees F.

I made approx. 3-inch balls of aluminum foil (4) and draped 9-inch tortillas over them. I put two to a cookie sheet, spaced as far apart as possible. Spray with cooking spray and sprinkle with chili powder.

Bake for 8 minutes or so, then remove from oven. They will drape down as they bake, and form a "bowl".

INTO THE COOKED TORTILLA BOWL I PUT:

1. A BIG HELPING OF A SALAD
I made with red cabbage (sliced very thinly), sweet onion, and tossed with a vinaigrette. You can make this and set it aside.

2. THE WARM TACO MEAT PART:
1 lb of ground beef, chicken, turkey or TVP, some thinly sliced onion and a couple of cloves of garlic, 1/2 to whole small tin of black beans, drained and mashed with a fork, 1 small tin of tomatoes, 1 packet of taco seasoning.

Brown the meat/TVP and add the taco seasoning, draining off any excess fat first if desired/needed. If you are trying to brown anything other than the beef, you will need some olive oil in the pan before you begin.

Add in the onions and garlic and soften them a bit, then add in the tomatoes and turn it down to a simmer to cook through and meld the flavours together.

TOPPINGS:
Now you can prepare any toppings you might like, such as grated cheese, avocado, sour cream, green onion, diced tomato, or whatever you might like or have on hand that you think will go with your meal.

In the time I have written this, you could have made this, so I hope you will give this a try. It is a fun, light meal for small and big kids alike!

You can re-use the aluminum foil balls over and over again.
