June, try this on your guests. This is fabulous served cold over a block of cream cheese and served with nice crackers or served warm over a homemade croustade that is first spread with goat cheese and then topped with thi:

RED ONION, DEMERRERA SUGAR AND CRANBERRY CONFIT

2 large red onions, halved and then sliced paper thin (about 3 cups)
4 tablespoons olive oil
4 heaping tablespoons demerrera or brown sugar
4 tablespoons Balsamic Vinegar
1/2 cup dried cranberries

Heat olive oil in a large skillet. Stir in thinly sliced red onions. Cover and cook on low for about 20 minutes until very soft.

Stir in all remaining ingredients and cook over low heat (uncovered) until all the liquid evaporates and the onions almost become like jam. Cool and then store in a covered container.

This can be made two weeks ahead!! It is fabulous and everyone raves about it!! Serve as suggested above. Enjoy!
