This recipe comes from the Betty Crocker Diabetes Cookbook and is a total surprise in that it is terrific tasting without the added calories and trouble. I believe I have my favorite enchilada recipe posted here and it is a good one, it has cream or half and half in the sauce. But this one contains only 17 grams of carbs per servings, serves 6 and it is made in a jiffy with all fresh, easy to get ingredients. I used rotisserie chicken and store bought salsa. DH and I were surprised at how delicious it came out so I am sharing. I saved the other 3 in foil for later in the week. I think this dish would also make a great pot-luck as well as to take to someone's home...
Chicken Enchiladas
1 cup mild green salsa verde or salsa
1/4 cup cilantro sprigs
1/4 cup parsley sprigs
1 Tbsp. lime juice
2 cloves garlic
2 cups cooked turkey or chicken meat
3/4 cup shredded mozzarella cheese
6 flour tortillas 6-8 inches diameter
FOR SERVING:
1 medium lime cut into wedges
sour cream
extra cup of fresh salsa
Heat oven to 350 degrees F. Spray a baking pan 11x7x 1 1/2 with cooking spray.
Place green sauce, cilantro, parsley, lime juice and garlic in food processor. Process till smooth. Reserve half of mixture.
Mix remaining sauce with chicken and 1/4 cup cheese; blend well and spoon 1/4 cup mixture in tortilla, rolling up and placing in pan seam side down.
Pour remaining sauce over enchiladas. Sprinkle remaining cheese over and bake for 20-25 minutes uncovered.
Serve with sour cream and lime wedges.
(I used an extra cup of salsa to pour over top of enchiladas.)
