CHINESE-FLAVORED CHICKEN WINGS1 cup olive oil
1 1/2 teaspoons crushed red pepper
2 tablespoons minced fresh gingerroot
5 garlic cloves, minced
1/2 cup soy sauce
1 tablespoon honey
2 tablespoons red wine vinegar
1 teaspoon coarsely ground black pepper
5 pounds chicken wings, wing tips removed
In small skillet combine olive oil and red pepper, heating until pepper begins to sizzle. Pour into small bowl, add ginger, garlic, soy sauce, honey, vinegar and pepper. Whisk together.
Arrange chicken wings in shallow nonreactive pan or bowl and pour marinade over. Turn chicken to coat all sides. Cover and marinate for 1 hour at room temperature, turning once.
TO BAKE:Preheat oven to 350 degrees F.
Spread wings in single layer on baking sheet and drizzle with any marinade left in pan. Place in oven and bake 30 minutes. Raise oven temperature to 400 degrees and cook chicken for another 30 minutes to glaze and caramelize it. Pour off excess juice, turn chicken pieces over, and return pan to oven for 10 minutes.
Remove from oven and let stand 10 minutes before serving.
