"In Cincinnati is a restaurant chain called Frisch's Big Boy Restaurants. They serve a yummy double-decker hamburger called the "Big Boy" and they serve a luscious chili. This is a copycat version, which tastes very much like Frisch's original."
1 pound lean ground beef
1/2 cup chopped onion
1 (10 ounce) can condensed tomato soup
1 (10 ounce) soup can water
1 (6 ounce) can tomato paste
3 teaspoons chili powder (or to taste)
1/2 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon sugar
1 (15 ounce) can red kidney beans, drained
In a large 4-quart saucepan, brown crumbled ground beef and onion. Drain off excess grease.
Add tomato soup, tomato paste, chili powder, cumin, salt and sugar. Mix well. Simmer for one hour.
Add drained kidney beans, and simmer one more hour.
Makes 4-6 serving

CHILI RECIPE LIKE FRISCH'S BIG BOY
3 pounds ground beef
3 cups water
1 small onion, chopped
1 green bell pepper, chopped
1 generous cup of tomato puree (about 5 oz)
1 (6 oz) can tomato paste
2 1/2 tablespoons chili powder (or to taste)
1 tablespoon salt (or to taste)
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon paprika
2 to 3 cans (16 oz each) kidney beans
PRESSURE COOKER METHOD:
Place crumbled ground beef in pressure cooker with water and cook for one hour (don't brown). Add onions and green pepper, continue cooking in pressure cooker for 30 minutes. Add everything except beans and cook slowly in open cooker for 2 hours, stirring occasionally. Add beans and continue cooking for 5 minutes.
STOVETOP METHOD:
Place everything except beans in a large soup pot. I am using our Le Creuset enameled cast iron pot which heats so well and keeps food warm for hours. And of course I'm using a heat resistant spatula (doesn't stain either) to stir the chili with. That way I can get stir around the sides of the pan too. After about 30 minutes, check to see if meat is cooked. If it is, add beans and cook another 20 minutes or so. Taste for seasonings. The longer you cook this the better it gets.
Makes 12-16 servings. Can be frozen.
