I received this recipe from Andee (Farmington, IL) who said that her sister worked at Humt's. She said that this was the original recipe.
HUNT'S FAMILY RESTAURANT TENDERLOIN SANDWICH
Cut 1 (20 oz+) pork tenderloin into 4-5 pieces, butterfly each piece, place between plastic wrap and pound out to approximately 1/4-inch thick.
Mix together in a bowl:
1 egg
1 cup buttermilk
1 tablespoon flour
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon ground black pepper
Add pork pieces and cover, let marinate at least 4 hours in the refrigerator, over night is better, (the buttermilk helps break down and further tenderize the meat).
For the breading mix together:
1/2 cup flour
3/4-cup panko or regular bread crumbs
1/4 cup corn meal
1 teaspoon Italian Spice mix (dried basil, oregano, and rosemary)
1 teaspoon bacon salt (optional, might be hard to find) or 1 teaspoon seasoning salt
Bread tenderloin pieces well and deep-fry at 375 degrees F until golden brown, do not over cook!
