TOPPING:
1/2 c. flaked coconut
1/4 c. brown sugar, packed
2 tbsp. butter
1 tbsp. flour
CAKE:
1 pkg. blueberry muffin mix
1 (8 oz.) can crushed pineapple, with juice
1 egg
FOR TOPPING: Combine coconut, brown sugar, butter and flour in small bowl. Mix with fork until well blended. Rinse blueberries with cold water and drain.
FOR CAKE: empty muffin mix into medium bowl. Break up any lumps. Add pineapple with juice and egg. Stir until blended, about 50 strokes. Fold in blueberries. Spread into pan. Sprinkle topping mixture over batter. Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted in center comes out clean,

BLUEBERRY SOUR CREAM COFFEE CAKE
COFFEE CAKE:
1 pkg. blueberry muffin mix
1/3 c. dairy sour cream
1/4 c. milk
1 egg
1/4 c. blueberry preserves
GLAZE:
1/2 c. confectioners sugar
2 1/2 tsp. water
Preheat oven to 375 degrees. Grease an 8 or 9 inch round cake or pie pan. Rinse blueberries with cold water. For coffee cake: Combine dry muffin mix, sour cream, milk and egg in bowl. Stir until moistened. Spread half of batter into pan. Spread half of blueberry mixture on top of batter. Spread remaining batter over blueberry layer. Spread remaining fruit on top, avoiding edges. Bake at 375 degrees for 30 to 35 minutes or until golden.
For glaze, combine confectioners sugar and water in small bowl; stir until smooth. Drizzle over hot coffee cake.

BLUEBERRY-BANANA COFFEE CAKE CAKE
1 (7 oz.) pkg. wild blueberry muffin mix (Jiffy)
1 (7 oz.) pkg. banana nut muffin mix (Jiffy)
1 egg
1/2 c. milk
STREUSEL TOPPING
1/2 c. brown sugar, packed
1/3 c. all-purpose flour
1/4 c. (1/2 stick) butter
1/2 tsp. cinnamon
CAKE: Heat oven to 400 degrees. Grease 9x9x2 inch baking pan with shortening. Prepare the muffin mix as directed on package except, after mixing, pour the batter into the greased pan. Sprinkle with topping. Bake in 400 degree oven 20 to 25 minutes or until wooden pick inserted in the center comes out clean. Serve warm.
TOPPING: Mix 1/2 cup brown sugar, 1/3 cup flour, 1/4 cup butter and 1/2 teaspoon cinnamon in small bowl with fork until crumbly.

EASY BLUEBERRY CAKE1 pkg. blueberry muffin mix (cheapest kind)
2 tbsp. cooking oil
1 egg
1/2 c. water
1/3 c. brown sugar
1 tsp. cinnamon
Heat oven to 350 degrees. Empty blueberries into strainer; rinse and set aside. With fork, stir oil, egg, water, and muffin mix about 1 minute. Put into 8 or 9-inch cake pan and level batter.
Sprinkle berries, sugar, and cinnamon over top. Swirl with fork to create marbled effect. Bake at 350 degrees 25-35 minutes until pick comes out clean. Serve.
