1 cup lime juice
1 cup rice vinegar
2 Tbsp minced garlic
1 1/2 oz chipotle pepper puree
4 oz honey
2 tsp kosher salt
3 cups canola oil
3 oz cilantro leaves
sanitize all work areas, boards, equipment and sinks used in the preparation of this recipe. puree the chipotle peppers and sauce together and store in a clean container.
In a plastic 8 qt container, combine the lime juice, rice wine vinegar, garlic puree, chipotle puree, honey and kosher salt. slowly add oil to mixture as you puree with a burrstick. cover, date, label and store in refrigerator.
CHINESE CHICKEN SALAD

CHINESE BAR-B-QUE MARINADE
Makes 1 1/2 cups
1 cup Hoisin sauce
1/2 cup granulated sugar
1/4 cup soy sauce
1 teaspoon five spice powder
3/4 teaspoon garlic puree
2 1/2 tablespoon dry sherry
1 3/4 teaspoons red food coloring
1 pound skinless boneless chicken breast
Mix all ingredients together. Add cleaned skinless chicken breasts to marinade. Marinade chicken for at least 4 hours. Cook chicken breasts.
GINGER SESAME DRESSING
Makes 1 quart
1 1/2 cups rice wine vinegar
1/2 cup soy sauce
1 cup granulated sugar
2 Tablespoons ground ginger
2 Tablespoons dry mustard
1 Tablespoon coarsely ground pepper
1 cup canola oil
2 Tablespoons sesame oil
2 Tablespoons toasted sesame seeds
In mixing bowl combine vinegar, soy sauce, sugar, ginger, ground mustard, and pepper. Whip until sugar dissolves. Add canola and sesame oil and whip to combine. Add toasted sesame seeds and blend together.
CHINESE CHICKEN SALAD
4 ounces cooked Chinese chicken
2 ounces romaine lettuce
2 ounces mescaline mix
3 ounces Chinese vegetable mix
Julienne yellow peppers
Julienne red peppers
Julienne carrots
Julienne bok choy
1/2 ounce fried wonton strips
2 ounces ginger sesame dressing
1 teaspoon black and white sesame seeds
1/2 ounce wonton strips
2 each thin breadsticks
Julienne chicken breasts.
In a mixing bowl toss together romaine lettuce, mescaline mix, Chinese vegetable mix, fried wontons, chicken, and dressing.
Arrange salad on black bowl. Place wonton strips on sides of salad.Garnish with sesame seeds and breadsticks.
