Recipe: Moosewood Restaurant Pesto Provencal (using parsley, thyme, rosemary and oregano)

Herbs and Spices
PESTO PROVENCAL

1 cup loosely packed fresh parsley leaves
2 tbsp. fresh thyme leaves
2 tbsp. fresh rosemary leaves
1 tbsp. fresh oregano leaves
1/4 cup chopped scallions
1/3 cup pine nuts or almonds
1/4 cup extra-virgin olive oil
Salt and ground black pepper to taste

Whirl all ingredients but oil in a food processor. When well-chopped, add oil in a thin stream to form a smooth paste.
