Recipe: Raspberry Filled Poppy Seed Cookies (using raspberry jam)

"An easy cookie to make but it looks special enough for any get together."

1 cup butter, softened (no substitution)
1/2 cup sugar
2 egg yolks
1 tablespoon Durkee 100% Pure Vanilla Extract
2-1/4 cups flour
3 tablespoons Durkee Poppy Seed
1/8 teaspoon salt
1/2 cup raspberry jam
Powdered sugar for dusting
Preheat oven to 350 degrees F.
Beat butter and sugar until light, using an electric mixer; beat in
egg yolks and vanilla. In a separate bowl, combine flour, poppy
seeds and salt; gradually add to butter mixture, mixing until just
blended.
Shape dough into 1-inch balls. Place 1 inch apart on lightly
greased baking sheets. Make a deep indentation in center of
each ball.
Bake for 18 to 22 minutes or until edges just begin to brown.
Transfer from baking sheets to wire racks; cool completely.
Spoon jam into centers of cookies; dust with powdered sugar
as desired.
