Recipe: Spicy Mary Burgers with Horseradish Mayo

SPICY MARY BURGERS WITH HORSERADISH MAYO

1/4 cup tomato juice
1 large egg
1/4 cup fine dried bread crumbs
1/4 cup finely chopped dried tomato
1 tablespoon Worcestershire sauce
1 1/2 teaspoon celery salt
1 teaspoon minced or pressed garlic
1 1/2 teaspoon hot sauce
1 1/4 pounds ground lean beef (7 percent fat)
Vegetable oil (for oiling grill)
FOR SERVING:
1/2 cup mayonnaise
1 tablespoon prepared horseradish
4 hamburger buns, toasted
ketchup, thinly sliced cucumber, pickles, tomato and onion

In bowl, combine first nine ingredients. Mix gently just until ingredients are evenly blended. Divide mixture into four equal portions and shape into 3/4-inch thick patties. (If making ahead, place side by side on plate, cover airtight and chill up to 24 hours.)

WHEN READY TO COOK:
Prepare charcoal or gas grill. Brush grate with generous amount of oil.

Toast buns by laying them cut side down on grill for 1-2 minutes.

Cook patties, turning once, until meat is no longer pink in the center.

In small bowl, blend mayonnaise with horseradish. Spread mayonnaise mixture on toasted buns and transfer burgers to buns; garnish to taste.
