Recipe(tried): Angela Landsbury's Shrimp Casserole

angela landsbury's shrimp casserole
(original recipe)

1/4 cup butter
2 cups chopped onions
1 cup chopped celery
1 tablespoon minced garlic
2 8 ounce bottles clam juice ( i use fish stock from my fish store)
1 cup heavy cream
3 tablespoons fresh lemon juice
3 pounds medium shrimp peeled and deveined. i use half shrimp and half scallops
1/2 cup chopped fresh dill, divided
6 cups cooked rice
2 cups finely crumbled feta cheese

Preheat oven to 350 degrees.

Heat butter over medium heat,add onions celery and garlic, saute until translucent. Add clam juice, cream, and lemon juice; increase heat to high and cook 10 minutes until reduced by half. Add shrimp and cook until pink 2 to 3 minutes. add 1/3 cup dill

In shallow 3 quart casserole layer half the rice, half the feta and half the shrimp mixture. Repeat layering. Cover with parchment paper and bake 30 minutes until hot. Sprinkle with remaining dill. Do not over cook.
