Recipe(tried): Apple Cider Chicken (slow cooker) (recipe change 11-09-06)

APPLE CIDER CHICKEN

Adapted for the slow cooker from a recipe on the Rachael Ray show.

extra-virgin olive oil, for browning the chicken pieces
3 lbs chicken legs or thighs or both, bone-in
Salt and pepper
3 large yellow onions, thinly sliced
sprinkle of mixed Italian herbs, dried
3 tablespoons honey (eyeball it)
4 large cloves garlic, chopped
1/2 cup apple cider vinegar
1/2 cup apple cider or juice
1/2 cup chicken stock

Preheat a Dutch oven over medium-high heat. Add a couple tablespoons of EVOO, 2 turns of the pan. Season chicken liberally with salt and pepper, and add to the hot oil, skin side down. Brown chicken in batches, about 5 minutes per side. Remove to slow cooker.

Add another 2 turns of the pan of EVOO, the onions, herbs, honey and the garlic. Season the onions with salt and pepper, cook to soften onions(a few minutes, stirring frequently), remove to slow cooker.

Deglaze the pan with the chicken stock, scraping up any tasty bits from the bottom, add the cider and heat them both up a bit. Add the liquid to the slow cooker, give it all a big stir to mix up the ingredients, cook on low for 5 or 6 hours.

Serve with mashed potatoes to soak up all the lovely sauce.
