Recipe(tried): High Altitude/lower fat carrot cake

Preheat oven to 350 degrees. Grease & flour 9 X 13 pan.
Grate 3 1/2 Cups of carrots.

beat 1 1/2 Cups of sugar and 4 eggs until thick and lemon colored. Add 1 teaspoon vanilla, 1/2 cup vegetable oil, and 1 cup applesauce.

In a separate bowl, mix 2 Cups flour, 2 teaspoons baking soda, 1 teaspoon salt, 2 teaspoons cinnamon, and 1 teaspoon allspice. Add this gradually to egg mixture.

Fold in the carrots, and about 1/4 cup well drained crushed pineapple. Also 1 Cup chopped nuts, if desired.

Spread in pan and bake 45 minutes.

When cool frost with cream cheese frosting - 1 pkg cream cheese, 1/2 stick of butter, 1 teaspoon vanila, 4 teaspoons cream and about 2 1/2 to 3 cups powdered sugar.I have made this cake many times, and it always works - even the time I forgot the sugar!
