ICE CREAM TIRAMISU
1/2 cup cooled freshly brewed double-strength coffee
2 tablespoons granulated sugar
2 tablespoons Marsala wine
1 teaspoon vanilla extract
24 hard ladyfingers
3 pints coffee ice cream (6 cups), softened
2 teaspoons unsweetened cocoa powder
Mix the coffee, sugar, wine, and vanilla in a small bowl; set aside.
Arrange half of the ladyfingers in the bottom of a 9-inch square dish. Brush the ladyfingers with half of the coffee mixture, allowing time for them to absorb the coffee mixture. Spoon half of the ice cream over the ladyfingers.
Brush the remaining ladyfingers with the remaining coffee mixture. Place on top of the ice cream in the dish. Spread the remaining ice cream over the ladyfingers. Sift the cocoa powder over the ice cream.
Freeze for 3 hours or until firm.
TO SERVE:
Let stand at room temperature for about 10 minutes or until the dessert can be cut easily. Cut into squares to serve. Store the leftover dessert in the freezer.
