Recipe: Mini Meatloaves (using ground chicken or turkey, muffin pan)

MINI MEATLOAVES



About 1 1/4 pounds ground chicken or turkey
1/4 cup frozen chopped onions
2/3 cup Italian style bread crumbs
2 eggs
1/2 teaspoon minced garlic
1/2 cup Cheddar cheese, grated, fancy style

Preheat oven to 350 degrees F. Spray a 12-cup muffin pan with no-stick cooking spray.

In large bowl, mix together all remaining ingredients. Fill muffin cups with a scant 1/2 cup of meatloaf mixture.

Bake 25 to 30 minutes.

Makes 6 servings
