Recipe: Snack Cake Mix (and cakes: Banana, Applesauce, Chocolate and Carrot)

SNACK CAKE MIX

8 cups all-purpose flour
2 tablespoons baking soda
1 tablespoon salt
6 cups granulated sugar

In a large bowl, combine all ingredients. Stir with a wire whisk until blended. Divide mixture evenly into six (2 1/2 cup) containers with tight-fitting lids, about 2 1/4 cups each. Seal containers. Label and date with contents. Store in a cool dry place. Use within 10 to 12 weeks.

Makes 6 packages or about 13 1/2 cups Snack Cake Mix

BANANA-WALNUT SNACK CAKE
Makes 1 (8 or 9-inch) cake, 9 servings

1 package Snack Cake Mix (from recipe above)
1 egg
1/3 cup vegetable oil
1/2 cup mashed ripe banana
1/2 cup buttermilk or milk or water
1/2 cup chopped walnuts

Preheat oven to 350 degrees F. Pour 1 package Snack Cake Mix into an ungreased 8 or 9-inch square baking pan; set aside.

In a small bowl, combine remaining ingredients, beating with a fork to blend. Stir into Snack Cake Mix until blended.

Bake 30 to 35 minutes in preheated oven until a wooden pick inserted in center comes out clean. Cool on a rack.

APPLESAUCE SNACK CAKE
Makes 1 (8 or 9-inch) cake, 9 servings

1 package Snack Cake Mix (from recipe above)
1 egg
1/3 cup vegetable oil
3/4 cup applesauce
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/8 teaspoon ground cloves
1/2 cup chopped nuts
1/2 cup raisins

Preheat oven to 325 degrees F. Pour 1 package Snack Cake Mix into an ungreased 8 or 9-inch square baking pan; set aside.

In a small bowl, combine egg, oil, applesauce, cinnamon, allspice, and cloves, beating with a fork to blend. Stir into Snack Cake Mix until smooth and blended. Stir into nuts and raisins.

Bake 35 to 45 minutes until a wooden pick inserted in center come out clean. Cool on a rack.

DOUBLE CHOCOLATE SNACK CAKE
Makes 1 (8 or 9-inch) cake, 9 servings

1 package Snack Cake Mix (from recipe above)
2 tablespoons unsweetened cocoa powder
3/4 cup water
1 egg
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup semisweet chocolate pieces
1/2 cup chopped nuts

Preheat oven to 350 degrees F. In an ungreased 8 or 9-inch square baking pan, combine 1 package Snack Cake Mix and cocoa powder; set aside.

In a medium bowl, combine 3/4 cup water, egg, oil, and vanilla. Beat with a fork to blend. Stir into cocoa mixture until smooth and blended. Sprinkle chocolate pieces and nuts evenly over top of batter.

Bake 30 to 40 minutes in preheated oven until surface springs back when touched with your fingers.

CARROT SNACK CAKE
Makes 1 (8 or 9-inch) cake, 9 servings

1 package Snack Cake Mix (from recipe above)
1 egg, slightly beaten
1/3 cup vegetable oil
1 cup grated carrots
3/4 cup orange juice
1 teaspoon ground cinnamon
1/2 cup chopped nuts
Cream Cheese Frosting (recipe follows)

Preheat oven to 350 degrees F. Pour Snack Cake Mix into an ungreased 8 or 9-inch square baking pan; set aside.

In a medium bowl, combine egg, oil, carrots, orange juice, and cinnamon, beating with a fork to blend. Stir into Snack Cake Mix until blended. Stir in nuts.

Bake 35 to 45 minutes until a wooden pick inserted in center comes out clean. Prepare frosting; set aside. Cool cake on a rack. Spread frosting evenly over cooled cake.

CREAM CHEESE FROSTING

3 tablespoons butter or margarine, softened
1 (3 oz.) package cream cheese, softened
1 2/3 cups powdered sugar, sifted
1/2 teaspoon vanilla extract

In a small bowl, cream butter or margarine and cream cheese until light and fluffy. Beat in powdered sugar and vanilla until smooth.
