Recipe(tried): Applebee's Chicken Enchilada

If you are referring to the Chicken Enchilada that was almost the size of the plate served on.

APPLEBEE'S CHICKEN ENCHILADA

1 (10 inch) flour tortilla
2 oz sauteed jullienned onions
1 oz sauteed julienned green bell peppers
4 oz sliced grilled chicken

With warm chicken and veggies place in center of tortilla
fold tortilla in thirds so fold in on the bottom.

Spread 3 fl oz of mexi-ranch dressing (2 parts Ranch dressing mixed with 1 part salsa).

Spread 1/4 cup of monterey jack/cheddar mix.

Melt cheese (in microwave or cheese melter).

Makes 1 serving
