Recipe: Sweet Potato Pie (using orange juice)

SWEET POTATO PIE

2 cups cooked, mashed sweet potatoes
1 1/4 cup sugar
1/4 cup margarine, softened
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup milk
1/4 cup orange juice
3 eggs
1 teaspoon vanilla
1 (9-inch) unbaked pie shell

Combine all ingredients and place in unbaked pie shell.

Bake at 425 degrees F for 15 minutes. Then reduce heat to 350 degrees F degrees and cook an additional hour and 20 minutes.
