Recipe: Apple, Honey and Cottage Cheese Pancakes

Breakfast and Brunch
APPLE, HONEY AND COTTAGE CHEESE PANCAKES

1 cup cottage cheese
1 cup grated apple
cup all purpose flour
cup whole wheat flour
1 tb honey
1 tsp fresh lemon juice or Real Lemon
tsp salt
tsp cinnamon
4 eggs, separated and at room temperature
1/8 tsp cream of tartar
Melted butter
Vegetable oil
Powdered sugar

Combine first 8 ingredients in large bowl. Blend the yolks in. Beat the whites and cream of tartar in another bowl, until stiff but not dry. Fold of whites into batter; fold in remaining whites. Heat large skillet or griddle in medium heat. Film with butter and oil. Drop batter by cup (4 inch pancakes). Cook pancakes both sides until brown. Dust with powdered sugar and serve.
